Beef Kebabs With Pineapple And Tomato Salsa
- 8 tomatoes
- 1/2 pound fresh pineapple peeled, finely diced
- 1 green onion sliced
- 2 red chilies halved, deseeded and finely chopped
- 2 garlic cloves peeld and crushed
- 6 tablespoons olive oil divided
- 1 3/4 pounds beef steak
- 24 bamboo small, skewers, soaked in cold water
- 1 bunch cilantro
- 1 pinch sugar
- To make the salsa, roughly dice 2 of the tomatoes in a food processor or blender to a coarse puree. Quarter and deseed the rest of the tomatoes, cutting the flesh into cubes. Place the tomatoes in a bowl and mix in the pureed tomato, pineapple, green onion, chili and garlic along with 4 tablespoons of the oil. Season with salt, pepper and sugar.
- Cut the meat into thin strips about 4 inch x 3/4 inch. Lightly oil the skewers and thread through meat.
- Heat 1 tablespoon of the oil in a frying pan. Add half the skewers and sear 4-5 minutes until cooked through.
- Keep a few sprigs of cilantro for garnish. Chop the remaining stems and leaves and stir into the salsa.
- Serve the skewers and salsa, garnished with cilantro, and slices of baguette.
