Banana Maple Muffins
- 1 cup self-rising flour
- 1/4 teaspoon baking soda
- 1/2 cup sugar
- 2 ounces pecans chopped
- 1 teaspoon grated orange zest finely
- 3/4 cup sour cream
- 1 large egg lightly beaten
- 1/4 cup unsalted butter melted
- 1/4 cup maple syrup
- 2 bananas very ripe, . mashed
- powdered sugar to dust, optional
- Preheat the oven to 375u0b0F. Lightly grease a 12-hole muffin pan.
- Sift the flour and baking soda into a large bowl. Add the sugar, pecans and orange zest and mix to combine. In a separate bowl, mix together the sour cream, egg, butter and maple syrup. Add to the dry ingredients, then add the mashed banana. Mix until just combined, but do not over-mix.
- Spoon into the prepared pan. Bake for 20 mins, until a skewer inserted in the center of a muffin comes out clean. Leave to stand in the pan for 2 mins before turning out onto a wire rack. Serve warm or cooled, dusted with powdered sugar, if desired.
