Tortellini With Ham And Mushrooms
- 20 ounces tortellini fresh
- 2 tablespoons olive oil
- 2 tablespoons butter
- 7 ounces cooked ham thinly sliced
- 5 ounces mushrooms sliced
- 2 cloves garlic crushed
- 1/2 cup white wine
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- fresh parsley Chopped, for garnish
- Cook pasta in a large saucepan of boiling salted water according to package directions. Drain well.
- Meanwhile, heat oil and butter in a large skillet on high heat. Saute ham, mushrooms and garlic for 3-4 mins, until ham is crisp and mushrooms are tender. Add wine, stir, then simmer for 2-3 mins until almost evaporated.
- Add pasta, cream and Parmesan cheese. Toss well and season to taste. Serve sprinkled with parsley and additional Parmesan cheese, if desired.
