Party Tetrazzini
- 2 Tbsp. chopped onion (1 medium)
- 1 Tbsp. butter or margarine
- 1 clove garlic, minced
- 2 stalks celery, chopped fine
- 1 can Campbell's golden mushroom soup
- 1/2 c. water
- 1 Tbsp. sherry wine
- 1 Tbsp. chopped parsley
- 1 c. diced, cooked chicken, ham, turkey or 1/2 lb. large shrimp, cooked and cut in half
- 1/2 c. shredded sharp Cheddar cheese
- 2 Tbsp. chopped pimento (2 oz. jar), drained
- 6 oz. spaghetti (vermicelli or thin), cooked and drained
- In a saucepan, cook the onion, celery and garlic in margarine until tender. Blend in soup, water, cheese, sherry, parsley and pimento. Cook over low heat until cheese is melted.
- Stir often. Add meat or shrimp and heat for a few minutes.
- Pour over spaghetti and mix.
- Makes 3 to 4 servings.
