Summer Lemon Panna Cotta With Strawberries In Syrup
- 1/2 tablespoon gelatin sheets
- 1 3/16 cups single cream 35% fat
- 1 lemon zest organic
- 5/8 cup whole milk
- 2/3 cup caster sugar
- 2 tablespoons olive oil
- 1 1/2 cups strawberries fresh
- 2 tablespoons strawberry syrup
- Soak the gelatin sheets in a container with cold water.
- Pour the cream in a saucepan, add lemon zest (use a rasp on lemon peel to get a finer result).
- Let sit 10 minutes, then add the milk and sugar, bring to boil.
- Remove from heat, squeeze the gelatin, and stir into the pan, sheet by sheet. Stir well to make sure it's well melted.
- Add olive oil, mix well.
- Pour the mixture into small plastic cups, filling them 2/3 full.
- Let panna cotta harden in refrigerator for at least 3 hours.
- Cut strawberries in pieces, place in a bowl, add strawberry syrup. Store in a cool place.
- To serve, divide and pour strawberry sauce on panna cotta.
