Summer Lemon Panna Cotta With Strawberries In Syrup

  1. Soak the gelatin sheets in a container with cold water.
  2. Pour the cream in a saucepan, add lemon zest (use a rasp on lemon peel to get a finer result).
  3. Let sit 10 minutes, then add the milk and sugar, bring to boil.
  4. Remove from heat, squeeze the gelatin, and stir into the pan, sheet by sheet. Stir well to make sure it's well melted.
  5. Add olive oil, mix well.
  6. Pour the mixture into small plastic cups, filling them 2/3 full.
  7. Let panna cotta harden in refrigerator for at least 3 hours.
  8. Cut strawberries in pieces, place in a bowl, add strawberry syrup. Store in a cool place.
  9. To serve, divide and pour strawberry sauce on panna cotta.
