Pumpkin, Red Bean, And Vegetable Stew

  1. Saute the onion and garlic cloves in a splash of olive oil.
  2. Add the bay leaf and, as soon as the onion is translucent, stir in the tomatoes.
  3. Then add the pumpkin. As soon as the pumpkin is softened, stir in the white wine to cool it down.
  4. Add the turnip, carrots, celery, and beans and saute until they are softened.
  5. Stir in a splash of water and vegetable broth. As soon as the mix begins to boil, add the chili and kale.
  6. Once the mixture is well cooked, set it aside.
