Pumpkin, Red Bean, And Vegetable Stew
- 1 onion large, chopped
- 2 garlic cloves chopped
- olive oil as needed
- 1 bay leaf
- 2 tomatoes ripe, diced and de-seeded
- 1 slice pumpkin diced
- 5 ounces white wine
- 1 turnip diced
- 2 carrots sliced
- 1 stalk celery sliced
- 2 cans red beans cooked
- 1 vegetable stock
- 1 chili
- 1 head kale chopped
- 1 bunch parsley
- Saute the onion and garlic cloves in a splash of olive oil.
- Add the bay leaf and, as soon as the onion is translucent, stir in the tomatoes.
- Then add the pumpkin. As soon as the pumpkin is softened, stir in the white wine to cool it down.
- Add the turnip, carrots, celery, and beans and saute until they are softened.
- Stir in a splash of water and vegetable broth. As soon as the mix begins to boil, add the chili and kale.
- Once the mixture is well cooked, set it aside.
