Hawaiian Chicken
- 3 lb. chicken, cut up
- 1/3 c. cornstarch
- 1/2 c. salad oil
- 3 1/2 c. pineapple chunks, drained
- 3 large white onions, cut in thick slices
- 1 c. celery, cut up
- 3 green peppers
- 1/4 c. dark brown sugar
- 1/4 c. soy sauce
- 2 Tbsp. ginger
- Shake chicken pieces in bag with cornstarch until coated.
- Fry in oil until medium brown.
- Remove chicken.
- Put pineapple chunks, onions, celery and green peppers in deep Dutch oven or roaster. Mix remaining frying oil with brown sugar, soy sauce and ginger. Pour over vegetables.
- Add chicken.
- Cover and cook over low heat for 30 minutes or until tender.
- Lightly mix so that chicken will be under vegetables and cornstarch will cook into sauce.
- Cook until thickened.
- Serves 10.
