Fall Is So Yummy
- 1 tablespoon unsalted butter divided
- 3 apples I used gala, small dice
- 1 tablespoon brown sugar
- 1 tablespoon cinnamon divided
- 2 eggs
- 3 cups flour
- 1 1/4 cups sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- Oven at 350 degrees.
- For those lovely apples... In a saute pan, over low heat, add in 1 Tbsp butter, the apples, 1 Tbsp cinnamon and the brown sugar. Stir to coat and cook until the apples are slightly softened, approx 10-12 minutes.
- In the meantime, to a large bowl add the flour, sugar, baking powder, salt and 1 tsp cinnamon. Mix until well combined. Next mix in the apples.
- Lightly beat the milk and eggs together. Add the milk and egg mixture as well as the melted and cooled butter to the dry mix. Stir until just combined. Do not over mix, it will get tough.
- Using an ice cream scoop divide the batter into a lined muffin tin. Bake for approx. 18 mins.
