Low-Fat Rigatoni Casserole
- 1 (8 oz.) pkg. rigatoni, cooked and drained
- 1 lb. ground turkey
- 1/2 c. onion, chopped
- 1 clove garlic, minced
- 1 (26 oz.) jar Healthy Choice meatless spaghetti sauce
- 1/8 tsp. pepper
- 1 (15 oz.) container fat-free Ricotta cheese
- 1/2 c. skim milk
- 1/2 tsp. salt
- 1 c. Mozzarella low moisture - part skim cheese, shredded
- 2 Tbsp. Parmesan cheese
- In a large skillet over medium-high heat, saute ground turkey, onion and garlic until turkey is browned.
- Stir in spaghetti sauce and pepper.
- Reduce heat; simmer 10 minutes.
- In bowl, combine Ricotta cheese, skim milk and salt.
- Add rigatoni; toss to coat well.
- Spoon half the rigatoni mixture into an 8 x 8-inch baking dish.
- Top with half the Mozzarella cheese and half the sauce; repeat.
- Sprinkle with Parmesan cheese.
- Bake in 350u0b0 oven for 20 minutes or until heated thoroughly.
