Chicken Skewers With Peanut Dipping Sauce
- 6 chicken thighs fat trimmed
- 1/4 cup oyster sauce
- 2 tablespoons sweet chili sauce
- 2 tablespoons chinese rice wine
- 2 tablespoons ginger grated
- 1 pound cooked rice from 1 cup raw
- 1 mini cucumber cut into ribbons
- lime wedges to serve
- dipping sauce Peanut
- 1/4 cup lime juice
- 2/3 cup roasted peanuts chopped
- 3 tablespoons chopped cilantro
- 1 teaspoon fish sauce
- Cut each chicken thigh lengthwise into 3 pieces. Mix the chicken with the oyster and sweet chili sauces, wine and ginger and chill for 30 mins to marinate.
- Meanwhile, to make the peanut dipping sauce, combine all ingredients in a small serving bowl. Set aside.
- Preheat a grill pan or grill on high.
- Thread the chicken onto skewers and cook for 3 mins each side, until golden and cooked through.
- Serve with rice, cucumber, peanut dipping sauce and lime wedges.
