Beetroot Soup
- 1 tablespoon olive oil
- 1 onion chopped
- 1 clove garlic crushed
- 1 1/8 pounds beetroot cooked in natural juices
- 1 Knorr Beef Stock Pot dissolved in 850ml boiling water
- 1 tablespoon lemon juice
- 1 teaspoon creamed horseradish
- 2 slices granary bread
- 1 3/8 ounces Flora pro.activ Buttery spread 11/2oz
- Heat the olive oil in a saucepan and over a moderate heat fry the onion and garlic till softened.
- Dice the beetroot and add to the saucepan along with the beef stock.
- Bring to the boil, then reduce heat and simmer for 10 minutes. Add the lemon juice and horseradish.
- Liquidise the soup till smooth; if a smoother texture is desired strain through a sieve.
- Blend lemon zest with the Flora pro.activ Buttery spread, toast the bread and spread with Flora pro.activ Buttery spread.
- Cut into croutons and serve with the soup.
