Coconut Dhal

  1. If using dried curry leaves, place in boiling water for 2-3 minutes. Once rehydrated, dry the leaves and set aside.
  2. In a heavy based pan, place the lentils, coconut milk, 2 curry leaves, onion, tomato, and turmeric.
  3. Cover with 300 milliliters of stock and bring to the boil.
  4. Reduce the heat and simmer for 15 minutes or until the lentils are soft and beginning to break up.
  5. Add more stock if necessary to avoid the mixture becoming too thick.
  6. Serve with a garnish of curry leaves or coriander.
