Potato Rye Pizza
- 2 cups sourdough
- 2 7/16 cups rye flour
- 1 1/8 cups bread flour
- 1 teaspoon salt
- 1 cup water
- 4 potatoes
- olive oil
- rosemary
- Preheat the oven to 220 Celsius.
- Place the sourdough, rye flour, bread flour, and oil into a mixing bowl. Mix together and set aside for 20-40 minutes. Add the salt and knead slightly. Form into a ball and place into an oiled bowl. Cover and set aside until doubled in volume.
- Divide the dough into 2 sections and flatten with the hands or a rolling pin on a floured surface. Place the pizza shapes onto a baking sheet or cutting board so that it can be easily
- Thinly slice the potatoes and place onto the surface of the pizza in one layer. Sprinkle with salt and brush with olive oil. Sprinkle with rosemary.
- Bake for 20-25 minutes. Remove from the oven and serve immediately.
