Potato Rye Pizza

  1. Preheat the oven to 220 Celsius.
  2. Place the sourdough, rye flour, bread flour, and oil into a mixing bowl. Mix together and set aside for 20-40 minutes. Add the salt and knead slightly. Form into a ball and place into an oiled bowl. Cover and set aside until doubled in volume.
  3. Divide the dough into 2 sections and flatten with the hands or a rolling pin on a floured surface. Place the pizza shapes onto a baking sheet or cutting board so that it can be easily
  4. Thinly slice the potatoes and place onto the surface of the pizza in one layer. Sprinkle with salt and brush with olive oil. Sprinkle with rosemary.
  5. Bake for 20-25 minutes. Remove from the oven and serve immediately.
