  1. Preheat oven to 350u0b0.
  2. Beat egg whites until stiff, but not dry, and set aside.
  3. Beat the applesauce with the sugar until light and creamy.
  4. Sift the flour with the baking powder and salt.
  5. Blend the skim evaporated milk with the water and extract. Add the flour mixture to the creamed applesauce alternately with the milk mixture, beginning and ending with the flour mixture. Gently fold in the beaten egg whites.
