Bacon Egg And Cheese Muffins
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 3/4 teaspoon honey
- 1/4 teaspoon sea salt
- 1 1/4 teaspoons baking powder
- 3 egg whites I think 2 would have been plenty
- 1/2 cup skim milk
- 1/4 cup butter smart balanced, melted
- 6 slices turkey bacon uncured, fully cooked, mine was chopped ins
- 3 large eggs whisked
- 1/4 cup cheddar cheese
- Pre heat oven to 400 degrees.
- Mix flour, honey, salt and baking powder in medium size mixing bowl.
- In small mixing bowl whisk egg whites, milk and melted butter.
- Make a well in the dry ingredients and pour wet ingredients into dry and mix. Mixture will be clumpy and that is ok. If it is too dry add a little water.
- Fill 6 greased muffin tins with a spoonful of batter. If you use whole slices of bacon you would curl them and stand in the muffin tin. My bacon was chopped so I just placed a few pieces in each muffin.
- Cover bacon with the scrambled egg. Then top with a little more batter and cheddar cheese.
- Bake for 25 minutes.
