Crab & Veggie Stuffed Mushrooms
- 30 white mushrooms large
- 3 tablespoons promise buttery spread
- 1 cup zucchini finely chopped
- 1 cup red bell pepper
- 1/2 cup onion
- 8 ounces lump crabmeat
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Preheat oven to 350u0b0. Remove and finely chop mushroom stems; reserve 1 cup.
- Melt Promise(R) Buttery Spread in 12-inch nonstick skillet over medium heat and cook zucchini, red pepper, onion and reserved mushroom stems, stirring occasionally, 8 minutes or until tender. Stir in crabmeat, cheese, lemon juice, salt and black pepper; set aside.
- Arrange mushroom caps on a baking sheet; stuff with crabmeat mixture. Bake 30 minutes or until mushrooms are tender.
