Grandma'S Butterscotch Tarts

  1. Preheat oven to 375 F.
  2. To made the pastry shells:
  3. Sift flour and salt together.
  4. Cut shortening or butter in dry ingredients until mixture looks like fine oatmeal.
  5. Chill until read to use.
  6. Roll pastry dough out on floured surface
  7. Use circular cookie cutter or glass to cut out circular crusts.
  8. Put crusts in bottom of greased or non-stick muffin tin.
  9. To make filling:
  10. Beat sugar, butter, egg and vanilla together.
  11. Add pecans, coconut and butterscotch chipits
  12. Fill shells 2/3 full. Top with pecan halves or chopped pecans.
  13. Bake 15 to 20 minutes, or until golden brown.
