Grandma'S Butterscotch Tarts
- Pastry Shells:
- 6 c. unsifted pastry flour
- 2.5 c. salt
- 2 c. shortening or butter
- Filling:
- 1 c. brown sugar
- 0.25 c. butter, softened
- 0.125 c. chopped pecans
- 0.125 c. shredded coconut
- 0.5 tsp vanilla
- 1 egg
- 1 c. butterscotch chipits
- Preheat oven to 375 F.
- To made the pastry shells:
- Sift flour and salt together.
- Cut shortening or butter in dry ingredients until mixture looks like fine oatmeal.
- Chill until read to use.
- Roll pastry dough out on floured surface
- Use circular cookie cutter or glass to cut out circular crusts.
- Put crusts in bottom of greased or non-stick muffin tin.
- To make filling:
- Beat sugar, butter, egg and vanilla together.
- Add pecans, coconut and butterscotch chipits
- Fill shells 2/3 full. Top with pecan halves or chopped pecans.
- Bake 15 to 20 minutes, or until golden brown.
