Gnocchi With Smoked Paprika Beef And Peppers
- 1 pound sirloin steak beef, cut into strips
- 1 onion cut into thin wedges
- 5 ounces button mushrooms quartered
- 1 red pepper seeded and cut into strips
- 14 ounces diced tomatoes
- 1 teaspoon smoked paprika
- 14 ounces gnocchi
- crusty bread to serve
- Heat a large skillet on high heat. Spray with no stick cooking spray. Saute beef in batches for 2 mins, until browned. Remove from pan and cover to keep warm. Reduce heat to medium.
- Add onion to pan. Cook, stirring, for 5 mins, until softened and golden. Add mushrooms and pepper. Cook for 5 mins, until just tender.
- Stir in tomatoes and paprika. When bubbling, reduce heat to low. Simmer for 5 mins, until sauce thickens. Stir in beef. Season.
- Meanwhile, cook gnocchi in a large saucepan of boiling salted water according to package directions. Drain. Toss gnocchi with beef mixture and serve with crusty bread.
