Turkey Kofta Pitas
- 20 ounces ground turkey
- 1/2 yellow onion finely chopped
- 3 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1/4 cup parsley chopped
- 1 egg
- 2 tablespoons olive oil
- 2 teaspoons dill Finely Chopped
- 1/2 lemon juiced
- 1 teaspoon pepper
- 1/2 cup nonfat greek yogurt
- 8 whole wheat pitas pocket halves
- 1 tomato cut into 1/4 inch slices, then halved
- 1/4 cup parsley chopped
- 1/4 red onion thinly sliced
- 1/4 cup hummus
- Mix the ground turkey with the remaining ingredients. Make sure they are evenly distributed. Make into 11/2 inch wide patties.Add olive oil to frying pan to medium high heat. Once hot, place some of the turkey patties and cook 4 minutes a side. Cook in batches until all are finished. Set aside.
- Meanwhile, make tzatziki. In a small bowl, add greek yogurt, and the remaining ingredients. Refrigerate until ready to use.
- To make pitas, place 2 turkey patties into each pita pocket half. Add 1/2 a tomato, a few slices of red onion, some parsley, tzatziki and hummus. Enjoy!
