Turkey Kofta Pitas

  1. Mix the ground turkey with the remaining ingredients. Make sure they are evenly distributed. Make into 11/2 inch wide patties.Add olive oil to frying pan to medium high heat. Once hot, place some of the turkey patties and cook 4 minutes a side. Cook in batches until all are finished. Set aside.
  2. Meanwhile, make tzatziki. In a small bowl, add greek yogurt, and the remaining ingredients. Refrigerate until ready to use.
  3. To make pitas, place 2 turkey patties into each pita pocket half. Add 1/2 a tomato, a few slices of red onion, some parsley, tzatziki and hummus. Enjoy!
