Red Curry Coconut Soup With Rice Noodles And Prawn Recipe

  1. Start with slicing thinly your lime grass (or grate your lemon to get the zest).
  2. Heat up a small or medium pot on medium heat and place your red curry paste, lime grass (lemon zest) and 4 tablespoons of coconut milk. Stir well until all ingredients incorporate.
  3. Wait 1-2 minutes until the oils starts to separate from the sauce. It is time to add your homemade stock or water. Add your rice noodles as well. Season with a pinch of salt and a little bit of sugar.
  4. When your noodles are almost ready add 3/4 of your fresh chopped coriander and a splash of your coconut milk (if you like spicy you can add dried chilli as well or leave it just for the end to decorate your plate). Your soup is ready. (If you have raw prawns add them now to the soup and let them boil for 3 minutes).
  5. Place your rice noodles in your soup bowl, add your prawns and fill it up with your soup. Decorate with fresh coriander, dried chilli and slice of lemon.
  6. Your food is ready. Season with some extra fresh coriander, a splash of coconut milk, slice of lemon and sprinkle some dried chilli on the top. Your meal is ready.nnEnjoy.
