Beef Tenderloin On Papaya Salad
- 1 clove garlic peeled and finely chopped
- 1/4 cup fresh ginger peeled and grated
- 2 tablespoons honey + 1 tsp
- 1/4 cup soy sauce
- 5 teaspoons dry sherry
- 5 teaspoons balsamic vinegar
- 1 hot sauce splash
- 2 tablespoons oil
- 3/4 pound beef tenderloin
- 2 shallots peeled and finely diced
- 1 red chili pepper deseeded and finely chopped
- 8 sprigs fresh cilantro finely chopped + extra to garnish
- 3 tablespoons sesame oil
- 1 lime juiced
- 2 papayas peeled, deseeded and cubed
- For the marinade, mix garlic, ginger, honey, soy sauce, sherry, vinegar and hot sauce. Heat oil in a pan and saute beef for about 5 mins then marinate for 1 hour.
- Preheat oven to 325u0b0F. Place beef on an oiled baking sheet and cook for about 20 mins. Remove from oven and let cool for 1 hour.
- To serve, mix shallots, chili, cilantro, sesame oil, lime juice and papaya then transfer to serving vessels. Slice beef and place on top of salad. Garnish with cilantro.
