Prawn Salad
- 24 extra large shrimp cooked, peeled and deveined, with tails on
- 11 ounces papaya seeded, peeled and thinly sliced
- 2 avocados seeded, peeled and cubed
- 2 ounces watercress washed
- 7 ounces pea sprouts snow
- 1/2 lime juiced
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 lime peel finely grated and lime juiced
- 1 red chili pepper long, seeded and thinly diced
- 3 drops Tabasco Sauce
- Combine shrimp, papaya, avocado, watercress and snow pea shoots in a large bowl. Drizzle with lime juice. Season to taste.
- For the dressing, whisk mayonnaise, sour cream, lime peel and juice, 1/2 the chili pepper and Tabasco sauce in a small bowl. Season to taste.
- Arrange salad in serving dishes. Drizzle with dressing and sprinkle with remaining chili pepper.
