Spinach Salad With Italian Marinated Mushrooms & Gorgonzola
- 1/2 cup Wish-Bone Balsamic Vinaigrette Dressing
- 10 ounces cremini mushrooms or white mushrooms, washed and stems trimmed
- 1 purple onion small, sliced into 1/2-inch rounds
- 10 ounces baby spinach or 4 oz. baby arugula
- 4 slices bacon, crisp-cooked and crumbled
- 4 ounces cheese gorgonzola, crumbles
- Pour 1/4 cup Wish-Bone(R) Balsamic Italian Vinaigrette Dressing over mushrooms and onion in medium nonaluminum baking dish or resealable plastic bag. Cover, or close bag, and marinate in refrigerator, turning occasionally, at least 30 minutes.
- Remove vegetables from marinade, reserving marinade. Grill or broil vegetables, brushing with reserved marinade, 15 minutes or until tender. Quarter mushrooms and chop onion; let stand covered in medium bowl, then toss with remaining 1/4 cup Dressing.
- Toss spinach, mushroom mixture with juices, cheese and bacon in large serving bowl or platter. Sprinkle, if desired, with freshly ground black pepper.
