Lemon-Pecan Cookies

  1. Preheat oven to 375 F. Lightly grease baking sheet.
  2. In a small bowl, stir together flour, baking soda, cream of tartar and salt.
  3. In a medium bowl, beat together butter, shortening and sugar until fluffy. Add egg, honey, lemon peel and lemon extract. Beat until smooth. Add flour mixture, stir until a soft dough forms. Stir in toasted pecans.
  4. Drop dough by measuring tablespoons 2 inches apart on prepared baking sheet.
  5. Bake 7 to 8 minutes or until a light golden color (do not overbake). Cool cookies on the baking sheet on a wire rack 2 minutes before transferring to wire racks to cool.
