Chipotle Barbecue Sauce
- 1 tablespoon olive oil
- 2 garlic cloves finely chopped
- 2 chipotle chiles in adobo sauce finely chopped
- 1/2 cup ketchup
- 1 tablespoon adobo sauce
- 2 teaspoons brown sugar
- 2 teaspoons cider vinegar
- 2 teaspoons worcestershire sauce
- 1 teaspoon dijon mustard
- 1 teaspoon Tabasco Sauce or other bottled hot sauce, or to taste
- sea salt to taste
- ground black pepper freshly, to taste
- Heat a small saucepan over medium-low heat and add the olive oil. Add the garlic and chipotle chiles and cook, stirring frequently, 3 minutes.
- Increase the heat to medium and add the ketchup and next 6 ingredients (through Tabasco sauce) and season with salt and pepper. Bring to a light simmer, then reduce the heat to low and cook until thickened, 7-8 minutes.
- Transfer to a bowl. Use right away or cover and refrigerate overnight.
