Tuscan Tomato Soup With Grilled Cheese Toast
- 2 teaspoons extra-virgin olive oil
- 1 can peeled tomatoes
- chicken /veal/beef stock
- 1/4 cup red wine
- 1/2 onion cut into big dices
- 1 garlic clove
- 2 pork sausages or any type or you could use bacon as well
- 1 tablespoon shredded cheddar cheese
- 1/2 cup bread cut into cubes
- salt
- pepper
- 1/4 teaspoon sugar
- chili powder
- 1 tablespoon parsley leafs
- 1. Saute sausages in extra virgin olive oil till lightly browned, add onions and sweat, add garlic.
- 2. Once the onions and garlic has sweat off deglaze with red wine and allow alcohol to cook off.
- 3. Add the whole can of tomatoes, bread, and top up with stock till it just covers the ingredients.
- 4. Add cheese and season with salt, pepper, chili powder and sugar. Simmer for about 20 minutes till soup thickens. Add parsley and taste and adjust seasoning if necessary.
- 5. Garnish with olive oil, cheese and parsley. Serve with grilled cheese toast.
