El Yucateco Smoked Meatloaf

  1. In a skillet, heat the oil on medium high heat.
  2. Sweat the onions, celery and carrots for 5 minutes.
  3. Add the salt and pepper and mix.
  4. Add the hot sauce, ketchup and tomato juice and cook for two minutes mixing the ingredients thoroughly.
  5. Remove from heat and let cool.
  6. In a big bowl, combine the ground turkey and chicken and the cool Mirepoix sauce.
  7. Form into a loaf and place on 2 sheets of tin foil.
  8. Get your smoker prepared.
  9. Place the meatloaf on the foil in your smoker.
  10. Cook for 3 - 3 1/2 hours at 250 - 275 degrees.
  11. Meanwhile, in a sauce pot, add the veal stock and 1 teaspoon of the El Yucateco Red Hot Sauce.
  12. Reduce to one cup.
  13. Season with salt and pepper.
  14. To serve, slice the meatloaf and pour on as much gravy as you like.
  15. Serve and enjoy!
