King Ranch Chicken Casserole
- 1 chicken fryer
- celery
- 1 pkg. corn tortillas
- 1/2 can Ro-Tel tomatoes
- 1 can cream of mushroom soup
- 1/2 lb. Velveeta cheese
- onion
- bay leaves
- 1 bell pepper
- 1 Tbsp. chili powder
- 1 small onion
- Boil chicken
- with
- onion,
- celery and bay leaves until soft. Debone and cut into bite size pieces.
- Use small amount of broth from
- chicken
- and
- saute
- onions
- and green pepper. After cooking a short time, add soup, tomatoes, seasoning and salt
- to
- your taste.
- Now
- layer
- in
- casserole.
- First
- dip tortillas in broth, cut
- in
- 4 pieces and layer.
- Add part of liquid mixture
- and chicken.
- Do
- this
- 3 times, topping with cheese.
- Bake in 325u0b0 oven until bubbly and cheese melts.
