Gourmet Banana, Coconut, And Pecan Muffins
- 1 15/16 cups flour
- 3 teaspoons baking powder
- 3 5/8 tablespoons cane sugar
- 4 3/8 tablespoons pecans
- 2 tablespoons cinnamon powder
- 1 5/8 cups mashed bananas
- 7 1/8 tablespoons raisins rehydrated in hot water
- 7 3/16 tablespoons oats
- 3 eggs
- 3/4 cup greek yogurt
- 6 1/16 tablespoons coconut milk
- 2 7/8 tablespoons honey
- 4 tablespoons cane sugar
- 4 tablespoons butter cold
- 3 eggs
- 2 tablespoons flour
- 2 tablespoons grated coconut
- In a bowl, mix the flour, baking powder, sugar, pecans, and cinnamon.
- Add the mashed banana, raisins, eggs, yogurt, coconut milk, and honey. Stir gently.
- Preheat oven to 180 degrees Celsius.
- Pour the mixture into small muffin molds (flexible molds are preferable, if possible).
- In a bowl, mix the sugar and butter. Add the eggs, flour, and coconut and mix with your fingertips to a crumble.
- Put a little crumble on top of each muffin.
- Bake for 25 minutes.
