Carrot Hummus

  1. Preheat the oven to 350u0b0F. Line a large baking pan with foil.
  2. Toss carrots, garlic, 1 tbsp of the oil, cumin, coriander and red pepper flakes in a large bowl. Spread mixture on prepared pan.
  3. Roast for 20-25 mins or until carrot is golden brown and tender. Let stand 20 mins to cool. Process carrot mixture, chickpeas, tahini, lemon juice, remaining 1 tbsp oil and 2 tbsp hot water until well blended. Season with salt and pepper. Serve with pita bread.
