Carrot Hummus
- 2 large carrots thinly sliced
- 2 cloves garlic peeled
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 pinch red pepper flakes
- 15 ounces chickpeas drained and rinsed
- 1 tablespoon tahini paste
- 1 tablespoon lemon juice
- pita bread to serve
- Preheat the oven to 350u0b0F. Line a large baking pan with foil.
- Toss carrots, garlic, 1 tbsp of the oil, cumin, coriander and red pepper flakes in a large bowl. Spread mixture on prepared pan.
- Roast for 20-25 mins or until carrot is golden brown and tender. Let stand 20 mins to cool. Process carrot mixture, chickpeas, tahini, lemon juice, remaining 1 tbsp oil and 2 tbsp hot water until well blended. Season with salt and pepper. Serve with pita bread.
