Crepes With Spicy Plum Filling
- 1 1/3 cups plain flour
- 7 3/4 tablespoons soft brown sugar
- 2 eggs medium
- 350ml semi-skimmed milk
- 1 Flora Cuisine ds tspn, or 10g Flora Buttery Filling
- 3/4 pound plums halved and stoned
- 1 pinch mixed spice
- 1 star anise
- 1 tablespoon Flora Cuisine or 15g Flora Buttery

- Sieve the flour into a mixing bowl, add the brown sugar and mix in the eggs. Gradually add the milk, mixing thoroughly. Stir in Flora and mix well.
- Leave to one side while you make the filling. Heat the Flora in a saucepan and add all the ingredients. Cook for about 4-5 minutes until the fruit has softened.
- Heat a heavy based non-stick pan and add a small ladle of batter. Cook until golden on each side.
- Divide the fruit filling between the crepes, fold in half and sprinkle with caster sugar. Glaze under a hot grill.
