Crepes With Spicy Plum Filling

  1. Sieve the flour into a mixing bowl, add the brown sugar and mix in the eggs. Gradually add the milk, mixing thoroughly. Stir in Flora and mix well.
  2. Leave to one side while you make the filling. Heat the Flora in a saucepan and add all the ingredients. Cook for about 4-5 minutes until the fruit has softened.
  3. Heat a heavy based non-stick pan and add a small ladle of batter. Cook until golden on each side.
  4. Divide the fruit filling between the crepes, fold in half and sprinkle with caster sugar. Glaze under a hot grill.
