Roasted Oven Stuffer Chicken

  1. Wash bird inside and out and pat dry.
  2. Combine all of the ingredients for the stuffing and mix well. Gently separate the skin from the meat of the chicken and stuff the mixture under the skin.
  3. Combine the ingredients for the rub and smooth the rub all over the skin of the chicken.
  4. Place in a baking dish and bake until the skin is golden and the juices run clear. About 15-20 minutes per pound.
