Quick And Easy Bean Soup
- 8 cups chicken broth
- 1 sweet onion - sliced
- 3 cloves garlic - chopped
- 1 handful Italian parsley chopped
- 1 cup crushed tomatoes
- 29 ounces red kidney beans can of, - drained
- 1/2 lemon
- 1/2 teaspoon salt
- 1 dash black pepper
- 1 dash dried oregano
- 1 dash smoked paprika
- 1 dash chili powder
- curry Dash of ground
- romano cheese for grating
- olive oil
- Heat a drizzle of olive oil in a sauce pot and add the onions and garlic to saute. When the onions are soft and transparent add the chopped parsley and chicken broth.
- Gently simmer for a few minutes. Add the crushed tomatoes and the drained beans and continue to gently simmer on low.
- Add the seasonings to taste and simmer while preparing your favorite noodles or rice.
- Add the lemon juice.
- Grate Romano cheese when serving.
