Epic Quinoa Veggie Burgers
- 1/4 cup quinoa rinsed
- 1/2 cup vegetable broth
- 1 can black beans rinsed and drained
- 1 clove garlic finely chopped
- 2 tablespoons white onion finely chopped
- 1 carrot peeled and finely chopped
- 2 scallions finely chopped
- 2 tablespoons sesame seeds
- 2 teaspoons red pepper flakes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 egg
- 1/4 cup breadcrumbs
- 1 tablespoon olive oil
- 4 hamburger buns and your favorite toppings, I used lettuce, tomato, onion, pickles, dijon mustard
- Combine the quinoa and vegetable stock and cook according to package directions.
- Meanwhile, in a large mixing bowl, mash the beans using a fork or potato masher. Add the garlic, white onion, carrot, scallions, sesame seeds, red pepper flakes, salt, pepper, egg and breadcrumbs. Mix well.
- Add the cooked quinoa until combined.
- Divide the mixture into four balls and flatten each one out into burger patties.
- Add the olive oil to a pan and heat over medium-high heat.
- Add each patty and cook for about five minutes, flip and cook for about 5 minutes longer.
