Cod Casserole
- 1 1/3 pounds potatoes
- salt
- 1/2 cup olive oil
- 7/8 pound cod unsalted, flaked
- 1 handful parsley diced
- 2 garlic cloves diced
- 2/3 tablespoon heavy cream
- cheese Emmental, grated
- ground black pepper
- Boil the potatoes with very little salt until soft. Drain and mash. Set aside.
- Preheat the oven to 200 degrees Celsius.
- Set a heavy-bottomed pot on low heat, then add a drizzle of oil and the cod, parsley, and garlic. While constantly stirring, stream in the rest of the olive oil, pressing the cod along the sides of the pot so it breaks apart even more.
- When a paste has formed, remove from heat and stir in the cream and mashed potatoes.
- Add to an oven-safe dish, sprinkle with the cheese and ground black pepper, and bake until golden.
