Tiramisu (From Northern Italy)(Lift Me Up)

  1. Chop chocolate coarsely.
  2. Arrange half of the ladyfingers in one layer on a rectangular serving dish with sides at least 2 inches high.
  3. Lightly soak them with some of the cold coffee. Beat the egg yolks together with the sugar until creamy color. Add the Ricotta and mix gently.
  4. In a separate bowl, beat egg whites until stiff.
  5. Fold whites into the the egg-cheese mixture. Layer half of this mixture on the ladyfingers.
  6. Sprinkle half of the chopped chocolate.
  7. Repeat with a second layer of soaked ladyfingers, the remaining cheese mixture and the chopped chocolate.
  8. Cover with foil and refrigerate at least 1 hour before serving.
  9. Serves 12.
