Linguine In Vodka Sauce With Shrimp And Asparagus
- 1/2 pound linguine
- 1 teaspoon butter
- 2 cloves garlic
- 1/4 teaspoon red pepper flakes
- 1 1/2 ounces Roma tomatoes pounds, chopped or 28 can
- 1/4 cup vodka
- 1/4 cup heavy cream or half and half
- 1/2 cup ricotta cheese
- 12 spears asparagus chopped into thirds
- 1 pound shrimp peeled and deveined
- 1 bunch basil and/or thyme, chopped
- black pepper
- parmigiano reggiano cheese shaved
- While pasta water comes to a boil, saute garlic and red pepper flakes in butter. Add tomatoes and simmer for ten minutes.
- Start cooking linguine.
- Stir in ricotta cheese and cream into tomatoes.
- Add shrimp and vodka.
- Cook 2 minutes, then add asparagus and basil.
- Cook 2 more minutes.
- Serve on cooked and drained linguine.
- Garnish with more fresh basil, cheese and black pepper to taste.
