Pear And Orange Crepes
- 2/3 cup all purpose flour
- 3/4 cup skim milk
- 2 eggs
- 1 egg white
- 1 tablespoon vegetable oil
- 28 ounces pears in natural juice or in cranberry juice, if available drained, juice reserved
- 2 tablespoons sugar
- 2 oranges
- Sift flour into large bowl; make a well in the center.
- In a bowl, whisk together milk, eggs, egg white and oil. Gradually whisk into flour to form a smooth batter. Set aside 30 minutes.
- Combine reserved pear juice and sugar in a saucepan. Heat on low 2-3 minutes, stirring, until sugar dissolves.
- Bring to boil on high. Reduce heat to low; simmer, without stirring, 8-10 minutes, until reduced and syrupy. Remove from heat. Stir in pears and orange zest.
- Spray a non-stick crepe or small skillet with a little oil. Heat on high.
- Pour ladlefuls of batter into pan, tilting to cover base thinly. Cook 1-2 minutes. Turn crepe; cook other side 1 minute.
- Remove from pan; cover to keep warm. Repeat with remaining batter, spraying with oil before cooking each crepe if required.
- Fold crepes into quarters. Top with pears and syrup to serve.
