Vegan Palak Paneer
- 2 tablespoons oil
- 9 ounces firm tofu cut into cubes
- 2 onions peeled and finely diced
- 2 cloves garlic peeled and finely diced
- 3/4 inch fresh ginger piece, peeled and finely diced
- 1 red chili finely diced
- 1/4 teaspoon ground cloves
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon Garam Masala
- 1 1/4 pounds fresh spinach
- Heat the oil in a frying pan and saute the tofu, turning, until browned, then remove and set on paper towels. To the hot pan, add the onions, garlic, ginger, chili and spices and cook for 5 mins. Add the spinach and 1/2 cup of water and cook until wilted. Season with salt, add the tofu and cook for 2 mins. Serve immediately.
