Vegan Palak Paneer

  1. Heat the oil in a frying pan and saute the tofu, turning, until browned, then remove and set on paper towels. To the hot pan, add the onions, garlic, ginger, chili and spices and cook for 5 mins. Add the spinach and 1/2 cup of water and cook until wilted. Season with salt, add the tofu and cook for 2 mins. Serve immediately.
