Sea Bass And Scallop Grill With Mango Guacamole
- 1 pound fresh sea bass
- 1 pound scallops fresh
- Old Bay Seasoning
- extra virgin olive oil spray
- 1 mango small, peeled, seeded and diced
- 1 avocado ripe
- 1/2 cup grape tomatoes halved
- 1 jalapeno seeded and diced
- 1 handful fresh cilantro diced
- 1 lime
- coarse sea salt
- ground pepper
- Preheat the grill to medium heat. Spray all sides of seafood with olive oil spray and season with the Old Bay Seasoning. Place on grill pan or foil in a preheated grill. Grill until fish begins to flake and the scallops become firm and browned on the outside.
- Add the guacamole ingredients to a small bowl and mash with a fork while seafood is cooking.
- Top each slice of fish with two tablespoons of mango guacamole.
