Espresso Chocolate Chip Cookie Mix
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons Fire & Flavor coffee rub
- 1 cup brown sugar packed
- 1 cup old-fashioned rolled oats
- 1 cup chocolate chips
- 1/2 cup chopped pecans
- 1-quart jar with lid
- In a small bowl, combine flour, baking soda, powder, and salt. Carefully spoon into glass jar and spread into an even layer. Layer remaining ingredient on top of flour starting with coffee rub and ending with pecans. Secure lid and decorate with ribbon and recipe card.
- Preheat oven to 350u0b0F. Grease two rimmed baking sheets and set aside. In a large mixing bowl, cream together 1/2 cup softened butter, 1 egg, and 2 teaspoons vanilla until combined. Slowly add contents of jar and mix well. Roll dough into 1-inch balls on place on baking sheet 3 inches apart. Slightly flatten cookies with back of spoon. Bake for 12 minutes or until lightly browned. Yields about 3 dozen.
