Apple Compote CrèMe BrûLéE
- 8 scoops Carte D'Or Vanilla Ice Cream 112g/200ml
- 2 apples dessert
- 1 cooking apple
- 5/8 cup granulated sugar
- 3 tablespoons cold water
- 1 13/16 tablespoons light brown sugar
- 1 tablespoon water
- 1 vanilla pod

- Pre-heat the oven to 80u0b0C/60u0b0C fan assisted/ Gas Mark 1/2.
- Place the granulated sugar into a small pan with the water, bring to the boil and boil for 2 minutes. Allow to cool.
- Line a baking sheet with baking parchment.
- Slice one dessert apple into 12 thin slices and dip into the sugar syrup. Place them on the baking sheet and dry in the oven for approximately 5 hours.
- Peel dice and core the cooking apple and the remaining dessert apple.
- Place into a pan with the light brown sugar, water and vanilla pod. Cover and allow to simmer for 15 minutes to make the compote. Remove vanilla pod before serving.
- Cool the apple chips and set aside until dry.
- Place 3 apple chips slightly over lapping onto each dessert plate, top with a spoonful of the apple compote.
- Scoop the Carte D'Or Vanilla Ice Cream and place next to the apple chips. Serve sprinkled with cinnamon.
