Coconut Lemon Tofu And Greens
- tofu
- collards /kale/bok choy/ other green
- 1/2 onion
- 2 cans coconut milk
- soy sauce
- 1 cup lemon juice
- chop up some firm tofu (you can probably substitute meat but then presumably need to cook it long enough for it to be done)
- chop up some collards/kale/bok choy/ other green that can handle some cooking
- chop up half an onion
- toss it all into a pot with a can or two of coconut milk.
- add chili powder and some soy sauce or salt
- cook till greens are almost done and onions are soft (about 10 min)
- add a *lot* of lemon juice. Like at least a cup. Figure how much you want by taste - the final product should be something that approximates a lemongrassy taste
- cook till greens and onions are as soft as you like them to be.
- serve with rice or on its own
