Coconut Lemon Tofu And Greens

  1. chop up some firm tofu (you can probably substitute meat but then presumably need to cook it long enough for it to be done)
  2. chop up some collards/kale/bok choy/ other green that can handle some cooking
  3. chop up half an onion
  4. toss it all into a pot with a can or two of coconut milk.
  5. add chili powder and some soy sauce or salt
  6. cook till greens are almost done and onions are soft (about 10 min)
  7. add a *lot* of lemon juice. Like at least a cup. Figure how much you want by taste - the final product should be something that approximates a lemongrassy taste
  8. cook till greens and onions are as soft as you like them to be.
  9. serve with rice or on its own
