Chipotle Veggie Salad Bowl
- 2 cups romaine lettuce
- 1 cup pinto beans
- 1 tablespoon ground cumin
- 1 tablespoon water
- 1/2 cup red onion sliced
- 1/2 cup bell peppers sliced
- 3 cloves garlic sliced
- 1 tablespoon chili powder
- 1 teaspoon olive oil
- 1/3 cup chopped tomatoes
- 1 tablespoon red onions chopped
- 1 tablespoon chopped cilantro
- 2 orange slices
- salt
- In a bowl, combine the salsa ingredients and set aside.
- Heat oil and saute onions, peppers and garlic for 3-4 minutes. Add chili powder and cook for another couple of minutes. Remove from the pan, and set aside.
- In the same pan, add 1 tablespoon of water, beans, and cumin. Cook for 5 minutes or until beans become fragrant.
- Combine lettuce with cooked ingredients.
- Top with homemade salsa.
- Optional: Add your favorite salad dressing for more flavor.
