Crisp Squash-Pepper Toss(Microwave)

  1. Combine first 5 ingredients in a shallow 2 1/2-quart casserole dish.
  2. Add squash and cover with heavy-duty plastic wrap. Microwave on High for 3 to 4 minutes.
  3. Let stand, covered, 3 to 4 minutes.
  4. Add onion, garlic, pepper and olive oil.
  5. Toss gently. Microwave 2 to 4 minutes and add kielbasa.
  6. Toss.
  7. Cover and microwave on High for 1 to 2 minutes.
  8. Yield: 6 to 8 servings.
