Crisp Squash-Pepper Toss(Microwave)
- 1/4 tsp. each: dried whole basil, oregano and thyme
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. red wine vinegar
- 2 Tbsp. water
- 2 lb. yellow squash, cut into 1/2-inch slices
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 sweet red pepper, cut into 1/2-inch strips
- 2 Tbsp. olive oil
- 1/4 lb. light kielbasa, cut into 1/4-inch slices
- Combine first 5 ingredients in a shallow 2 1/2-quart casserole dish.
- Add squash and cover with heavy-duty plastic wrap. Microwave on High for 3 to 4 minutes.
- Let stand, covered, 3 to 4 minutes.
- Add onion, garlic, pepper and olive oil.
- Toss gently. Microwave 2 to 4 minutes and add kielbasa.
- Toss.
- Cover and microwave on High for 1 to 2 minutes.
- Yield: 6 to 8 servings.
