Mini Blueberry And White Chocolate Muffins
- 3 1/4 cups white flour
- 4 teaspoons baking powder
- 6 tablespoons white sugar
- 1 teaspoon salt
- 3/4 cup softened butter
- 4 eggs
- 1 cup semi-skimmed milk
- 1 1/8 cups blueberries
- 9/16 cup white chocolate cut into pieces
- Preheat oven to 200 degrees Celsius.
- Mix the flour, baking powder, sugar, and salt in a bowl.
- Add the butter, stirring with a fork. Then, gradually add the eggs and milk .
- Add the blueberries, and the white chocolate cut into pieces. Stir carefully because the blueberries are fragile. Or you can add the blueberries directly into the muffin molds and press them into the dough.
- Pour into mini muffin molds and bake for 17 to 25 minutes depending on the size selected .
- Let cool before serving.
