Spinach Meat Loaf
- 3 lb. lean ground beef
- 1 1/2 c. seasoned bread crumbs
- 2 large eggs
- 1 can tomato paste (6 oz.)
- 1 can cream of mushroom soup
- 1 medium bell pepper, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. Italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 (10 oz.) pkg. frozen chopped spinach
- Defrost frozen spinach and squeeze out excess water with paper towels.
- Mix ground beef and bread crumbs together.
- Beat eggs together and add to ground beef mixture; mix well.
- Add bell pepper, onion, garlic, Italian seasoning, salt and pepper to ground beef mixture, mixing well.
- Put ground beef mixture in a 10 x 13-inch loaf pan.
- Flatten out meat loaf mixture and add spinach to center, spreading out lengthwise.
- Close
- up meat loaf by wrapping meat mixture around spinach securely.
- Spread mushroom soup over top of meat loaf.
- Bake in a preheated oven at 375u0b0 for approximately 1 to
- 1 1/4 hours.
