Spinach Alfredo Lasagna

  1. Once all veggies are washed and diced, add 2 tablespoons of olive oil to a medium sized sauce pan and turn on to medium low heat.
  2. Saute vegetables until slightly cooked and wilted
  3. Boil lasagna noodles according to directions listed on box. Drain, cover and set aside.
  4. In a small pot, pour in heavy cream. Add the flour and whisk until lumps have somewhat dispersed. add the butter. Cook on medium low heat for 10-15 min.
  5. Layer the pan of choice with the first layer of noodles, then drizzle sauce and spread evenly.
  6. Layer and spread veggies and then the cheese.
  7. Repeat the layering process twice or more depending on preference of size.
  8. Place pan in oven for about 20 min on 325
  9. Remove and allow the dish to cool for 5-10 min then enjoy!
