Apple Nut Bread
- 3 c. chopped, peeled apples
- 3 c. plain flour
- 2 1/2 c. sugar
- 1 1/4 c. vegetable oil
- 4 eggs, beaten
- 1 tsp. vanilla
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking soda
- 1 tsp. cloves
- 1/2 tsp. baking powder
- 2/3 c. raisins
- 1/2 c. chopped pecans
- Preheat oven to 325u0b0.
- Generously grease 2 loaf pans or 16 muffin pans.
- Sift dry ingredients together; add oil, eggs, apples, vanilla, raisins and pecans to dry ingredients and mix well.
- Pour
- into
- pans.
- Bake
- until
- toothpick
- inserted
- in center comes
- out
- clean, about 1 hour for loaf pans and 30 to 45 minutes
- for
- muffins.
- Cool 10 minutes;
- remove from pans. Cool completely before slicing.
- Refrigerate.
