J'S Jam Packed Whole Wheat Oatmeal Cookies (And They Stay Soft)
- 1 stick unsalted butter soft, just let it hang out until you can squeeze it.
- 3/4 cup dark brown sugar firmly packed
- 1/4 cup cane sugar Sugar in the Raw, turbinado
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3 cups old fashioned oatmeal 1 1/2 cup whole & 1 1/2 cup ground, I use the NutriBullet with the flat blade
- 1/2 cup zante currants
- 1/2 cup dried cranberries
- 1/2 cup coconut flakes
- 1/2 cup dark chocolate chips
- Preheat oven to 350.
- Mix the butter, brown sugar, and raw sugar until creamy. Add the eggs and vanilla, mix till creamy. Add the currants, cranberries, coconut flakes and chocolate chips. Then add in the rest of the dry ingredients.
- Place parchment paper on a cookie sheet and spoon cookies onto sheet with a table spoon. Use fingers to flatten cookies.
- Back for about 12 mins or until edge is brown. net cool and enjoy!
